FILLED CAPSICUMS Ingredients 4 Red, green or yellow capsicums 5 tbsp Pukara Estate Pepper Flavoured Extra Virgin Olive Oil 1 med white onion diced ½ kg lean beef mince ½ cup cooked rice 1 can diced tomatoes 1 tbsp of oregano Fresh ground pepper 1 tsp Worcestershire Sauce ½ cup Tomato Sauce 2 cloves crushed garlic
Method Slice the top off the capsicums and remove seeds. Bring a large pot of water to the boil and add capsicums and a good pinch of salt. Cook for approx 3 minutes or until just softened. Drain and allow to cool. Preheat the oven to 200 degrees C. In a heavy based frying pan, add 4 tbsp Pepper Oil diced onion and garlic and cook on a med/ high heat. Add beef mince and combine. When brown, add tomatoes and rice and stir through. Season with salt and pepper. When slightly cool mix through the tomato and Worcestershire sauce. Drizzle the remaining oil on the inside of the capsicums and add the filling. Place capsicums in a baking dish that allows them to stand upright. Pour a little water into the bottom of the dish to prevent scorching during cooking time of 30 minutes. |
