MARINATED OLIVES  

Ingredients
1 med Spanish onion finely diced
1 red and 1 yellow capsicum finely diced
Dried bay leaves
Fresh thyme and oregano
Apple cider vinegar
Pukara Estate Premium Extra Virgin Olive Oil  



Method
Marinated olives are best stored in a container which does not allow light to penetrate but is still able to breathe. For this reason a pottery jar with an airtight lid is the best option. All the dry ingredients listed above must be diced as fine as possible.  

Depending on the quantity of olives you are marinating and the size of  your container it is then simply 3 parts Apple Cider vinegar to 4 parts Premium Olive Oil.  Add the dry ingredients and the olives to be marinated, green, black, or a combination of both. There should be enough liquid to just cover the top of the olives. Place container in a cool dry place out of direct sunlight and allow to marinate for at least 2 weeks before eating.
