New Products launched 2010!

 

We are pleased to present a new range of products including our Truffle Flavoured Extra Virgin Olive Oil. This unique oil has a rich earthy flavour and will add that decadent touch to any meal. We have also launched two new vinegars - a Red Wine Liqueur Vinegar and a White Wine Liqueur Vinegar. Both are sweet and tangy and can be used in a variety of dishes, adding great fresh flavour.

Also available are our brand new Pukara Estate Olive Oil soaps. Handmade, all natural soaps that will cleanse and moisturise without the use of any harsh chemicals.  Finally, we have our Pukara Estate Olive Wood Chopping Boards. These boards, made from the cuttings of trees from our Upper Hunter Valley olive grove, are great for using as cheese, antipasto or bread boards and have been beautifully hand crafted, each one unique, with beautifully grained wood.

Pukara Estate New Season 2009 Novello -SOLD OUT

 

 

 

 

This limited release Extra Virgin Olive Oil is only available for a short time after each harvest.  

Each year, Pukara Estate produces a strictly limited run of this traditional unsettled and unfiltered oil. Made from our first pressings of the 2009 harvest, Novello is carefully picked and pressed straight from the tree and bottled immediately. It’s the freshest oil you will taste!

A limited run of only 1500 bottles is being produced from the 2009 harvest, so you need to act fast to secure your supply! Novello can be purchased online today or alternatively, see below for a list of outlets where Novello will be available for a limited time only. 

Because Novello is unsettled and unfiltered, we encourage you to use the oil as quickly as possible to enjoy it at its best.  A fruity, robust Extra Virgin Olive Oil, Novello should be used in dishes that highlight the delightful fresh flavour of the oil. Bar-be School: Ministry Of Food Pukara Style!

With the beginning of Summer and the aroma of char grill barbeques starting to tantalise our tastebuds what better time to host our own Bar-be School, Pukara Style!

During September as part of the Hunter Olive Association initiative, ‘Feast of the Olive’, we held our Bar-be-School cooking classes. The day was a fantastic success with keen participants coming from all over the Hunter Valley to gain insight into how to master their own barbeques at home. The day was all about gaining professional tips, tricks and short cuts from our expert chefs in a great social environment. The lesson included how to use the roasting hood on your BBQ for maximum effect and taste, matching BBQ foods to great local wines from Two Rivers Winery in the Upper Hunter Valley, pairing our world class oils and vinegars with the right dishes to savour the infused taste of our oils and of course the ultimate way to cook the perfect steak! Around forty people attended the day out here at the Pukara Estate grove, which was a great hit with all those who participated. 


                                                                                                                               

    
                                                    
                                                                                
#New Varieties
New Varieties on the Horizon !

In October this year, two of our staff (Natalie & Adam) took it upon themselves to combine a well earned holiday to California with a couple of days checking out the olive harvest which was well underway during their visit.   The harvest was particularly interesting in some of the groves they visited, as they were planted with ‘new’ varieties that we are currently also trialing at Pukara Estate.

Four years ago we planted a trial plot with five varieties that were showing great promise across the industry. Over the past four seasons, two varieties in particular (Arbequina & Koroneiki) have proven to be outstanding in their yield and flavour profile on our site at Pukara Estate. We were very happy to find that excellent results were also being achieved with these two varieties in California.  These varieties also lend themselves towards a more intensive production style, referred to as ‘high density’ planted at approximately 1,000 trees per hectare. Pukara Estate is currently planted at a density of approximately 400 trees per hectare.   High density plantings are now beginning to appear all over the olive growing world with new plantings going into groves in Chile, Argentina, USA (California), Spain and Australia. It is our intention next spring to replant some of the older, less productive trees at Pukara Estate with some Arbequina and Koroneiki in a ‘high density grove’.

 Deliciously Light and Flavoursome Pukara Estate Mayonnaise - Order Now!

Four delicious Mayonnaises were launched by Pukara Estate in July 2006. Made with the goodness of Pukara Estate's award winning Extra Virgin Olive Oil and with whole eggs, our mayonnaise is guaranteed to be light and delicate.

The Traditional Mayonnaise is perfect spread on a toasted sourdough open sandwich with smoked ham, provolone cheese and semi dired tomatoes. Or for absolute simplicity and to enjoy the delicate flavour, try it with steamed or grilled asparagus spears.



The mustardy zing of our Wasabi Mayonnaise goes well with a pan seared kingfish fillet or with sashimi tuna. Serve these with a salad of avocado, bean sprouts, enoki mushrooms and toasted sesame seeds dressed with a generous amount of Pukara Estate Wasabi Mayonnaise. Finsh off with a drizzle of soy sauce.




Lemon & Lime Mayonnaise will complement any seafood dish. Make a simple seafood salad, by tossing some medium sized fresh prawns, fresh crab meat, roughly cut mango cheeks and celery strips with Pukara Estate Lemon & Lime Mayonnaise. It's also delicious with home made fish and chips or a steamed or grilled fillet of salmon.





To make a delicious salad, toss fresh shelled mud crabs with shaved celery, fresh dill, wild rocket and Pukara Estate Garlic Mayonnaise (Aioli).
