SPANISH CHILLI CHICKEN Ingredients1 kg Chicken 2 white onions 200 gms prusciutto 2 green capsicum 200gms button mushrooms sliced 2 cloves garlic finely chopped 200 ml Pukara Estate Chilli Flavoured Extra Virgin Olive Oil 1 cup dry white wine 200 ml veal or chicken stock 3 heaped tsp tomato paste Chopped parsley Method Heat ½ the Chilli Oil in a pan and add chopped onions, garlic and capsicum. When soft and mushrooms and continue to brown. Cut chicken into 4 and coat with plain flour, salt and pepper. In a separate frying pan add remaining Chilli Oil and brown chicken on both sides. Add tomato paste and white wine. Simmer for 5 minutes. Add stock and the vegetables from first pan. Simmer gently for 20 mins. Garnish with chopped parsley. |
