TOMATO AND OLIVE BRUSCHETTA  

Ingredients
1/3 cup Pukara Estate Premium Robust Extra Virgin Olive Oil  
4  Roma tomato
1 small red onion finely diced
½ cup finely chopped black olives
2 finely chopped garlic cloves
½ cup chopped fresh basil
1 loaf crusty bread sliced thickly  



Method
Toast bread and allow to cool. Drizzle with ½ of Robust oil. In a bowl, combine tomato, black olive, basil, onion, garlic, remaining Robust oil and salt and pepper. Spoon mixture over toasted bread and serve. Garnish with fresh basil leaves.
