PEPPER BEEF SKEWERS

FILLED CAPSICUMS
Ingredients
4 Red, green or yellow capsicums
5 tbsp Pukara Estate Pepper Flavoured Extra Virgin Olive Oil
1 med white onion diced
½ kg lean beef mince
½ cup cooked rice
1 can diced tomatoes
1 tbsp of oregano
Fresh ground pepper
1 tsp Worcestershire Sauce
½ cup Tomato Sauce
2 cloves crushed garlic
Method
Slice the top off the capsicums and remove seeds. Bring a large pot of water to the boil and add capsicums and a good pinch of salt. Cook for approx 3 minutes or until just softened. Drain and allow to cool. Preheat the oven to 200 degrees C. In a heavy based frying pan, add 4 tbsp Pepper Oil diced onion and garlic and cook on a med/ high heat. Add beef mince and combine. When brown, add tomatoes and rice and stir through. Season with salt and pepper. When slightly cool mix through the tomato and Worcestershire sauce. Drizzle the remaining oil on the inside of the capsicums and add the filling. Place capsicums in a baking dish that allows them to stand upright. Pour a little water into the bottom of the dish to prevent scorching during cooking time of 30 minutes.

PEPPER BEEF SKEWERS
Ingredients
500g Diced beef
3 tbls Pepper Flavoured Extra Virgin Olive Oil
1 tbls Red Wine Liqueur Vinegar
Dash of Chipolte Tabasco
1 red onion, cut in wedges
8 Cherry tomatoes

Method
Place the beef, Pepper Flavoured Olive oil,
Red wine vinegar and tabsaco in a bowl, season and combine. Leave to marinade
for 2 hours or overnight.
Soak the skewers before use. To begin the
skewers, start with a single cherry tomato, then a piece of beef and then a
slice of onion and repeat with the beef and onion until near the end. Then
place another single tomato at the other end and repeat until all the meat has
been skewered.
On a high heat, grill the meat until
desired cooking. 3-4mins for Medium.
Place on a bed of green salad and serve immediately.

TOAD IN THE HOLE WITH PEPPER OIL
Ingredients
½ cup Plain Flour
2 Eggs
½ cup milk
2 tbsp Pukara Estate Pepper Flavoured Extra Virgin Olive Oil
½ kilo good quality beef or pork sausages
Method
Pre heat oven to 220 degrees C. Sift flour into a bowl with a pinch of salt and pepper. Make a well in the centre of the flour. Whisk the eggs and milk into the centre gradually ensuring no lumps form. Cover and let stand for 30 minutes. Brown sausages in a heavy based pan with the Pepper Oil until cooked through. Place in a baking tray and cover with the batter. Cook for about 20 minutes or until batter has risen and golden. Serve with vegetables.
