TROPICAL LIME PRAWNS Ingredients ¼ cup Pukara Estate Lime Flavoured Extra Virgin Olive Oil ¼ fresh Lime Juice 3 tbsp Tequila 2 tbsp Cointreau or Grand marnier ½ cup diced shallots 2 large cloves garlic crushed ¼ cup finely diced red onion ½ tsp curry powder 1 tsp sea salt ¼ tsp ground cumin ½ tsp fresh black pepper 2 kg green prawns peeled and deveined tails on 1tbsp Pukara Estate Premium Extra Virgin Olive Oil
Method Place all the ingredients except the prawns and Premium Oil in a container suitable for marinating and mix well. Add the prawns and refrigerate for an hour, remembering to turn every 15 minutes. Heat a heavy based fry pan to a med/high heat and add the tbsp of Premium Oil. Remove prawns from marinade and cook for no more than a minute on each side. Put prawns aside in a warm spot and add the marinade mixture to the pan. Allow to reduce by a third. Serve on white rice and garnish with shredded coconut or fresh broad leaf parsley. |
