Asian Coleslaw

This fresh salad can be served as a side dish or with shredded chicken or tofu for a more substantial meal. The salad really allows the Wasabi EVOO to shine.

Ingredients

Half chinese cabbage sliced thinly

2 carrots, julienned

2 spring onions finely sliced

1 small red onion thinly sliced

1 large cucumber julienned

1 red capsicum julienned

1 tbls toasted sesame seeds

1 tbls chopped coriander

1 tbsl chopped mint

Dressing:

1 lime juiced

80mL Pukara Estate Wasabi Extra Virgin Olive Oil

1 tsp light soy sauce

1 tsp honey

Half tsp sesame oil

1 tsp minced ginger

1 garlic clove crushed.

Method

Combine all the dressing ingredients in a jar, season and shake well.

Combine all the sliced vegetables and herbs in a large bowl and toss well. Add the sesame seeds and pour over dressing and toss well again.

Serve along side grilled/barbecued meats, salmon, tuna or add some grilled tofu to the salad for a more substantial salad.
