Beetroot & Goats Cheese Parcels

This dish can be served on it's own as an entrée.

8 fresh baby beets peeled and quartered.

200g goats cheese

4 sprigs of thyme

1 tsp ground nutmeg

80mL Pukara Estate Caramelised Balsamic Vinegar

40mL Pukara Estate Premium EVOO

Pinch of Pukara Estate Oak Smoked Salt


Pre-heat oven to 180C. On 4 large squares of baking paper (roughly 25cmx25cm), divide the quartered baby beetroot, goats cheese, thyme and drizzle each with Caramelised Balsamic, Premium EVOO & season well & sprinkle with ground nutmeg. Wrap up in baking paper & seal with a little kitchen string.

Place parcels on a flat baking tray and cook for 45-50 minutes. Remove from oven. Snip string and serve still in parcel. Serve with a rocket salad & crusty bread.
