Crunchy Sprout Salad

Healthy, delicious salad that can be paired with anything.

Add to a sandwich for an alternative.

Ingredients

450g mixed sprouts (snow-pea sprouts, mung bean, sprout mix)

6 small red radishes, sliced thinly on a mandolin

2 large carrots, pealed and grated

handful chopped parsley and coriander leaves

1 punnet cherry tomatoes, halved

50g baby spinach leaves

1 Lebanese cucumber, thinly sliced

3 tbls Pukara Estate Macadamia and Chilli Dukkah

1 tbls Pukara Estate Traditional Mayonnaise

Quarter cup Pukara Estate lemon Flavoured Extra Virgin Olive Oil

2 tbls Pukara Estate White Balsamic Vinegar

Method

Place all ingredients in a large bowl and toss well so all ingredients are coated. Season to taste serve immediately.

Can be served on its own or along side grilled meat or fish.
