4 small flathead fillets, skinned and boned
2 tbls plain flour
Pinch Pukara Estate Oak Smoked Salt Flakes
30ml Pukara Estate Lemon Extra Virgin Olive Oil
4 tbls Pukara Estate Lemon and Lime Mayonnaise
1 ripe tomato, sliced
Half iceberg lettuce, pulled apart into smaller pieces
1 avocado, sliced
4 burger rolls or crusty white buns
On a flat plate place the flour and salt flakes and combine well. Coat the fish well in flour mix and dust off extra. Heat the lemon oil in a fry-pan over a high heat.
Place fish and cook on both sides for 2-3 minutes or until golden and just cooked through.
Meanwhile, cover the four buns on both sides with mayonnaise and avocado slices. Top with cooked fish, sliced tomato and lettuce. Serve immediately as a great summer lunch dish.
