Green Vegetable & Mint Salad
A healthy way to liven up green veggies
One way to freshen up steamed veggies and make more appealing especially to children. This flavoursome mix is also good the next day.
500g green beans
1 small broccoli
300g fresh peas
500g baby spinach leaves
1/2 cup chopped mint leaves
2 tbl Pukara Estate Lemon EVOO
2 tbl Pukara Estate White Wine Liqueur Vinegar
Pukara Estate Charcoal Smoked Salt
Steam beans, peas and broccoli until tender. Add vegetables to a large serving bowl with spinach leaves and mint.
Pour over Vinegar and Lemon oil, combine well, season and serve.
