Guava Granita topping for Freshly Shucked Oysters

A perfect accompaniment to fresh oysters!


120ml Guava vinegar

80mL Water

1 tbsp Lime juice

2 tsp caster Sugar (or to taste)

2 Kaffir Lime leaves


Place all ingredients in a small saucepan and gentle heat until the sugar dissolves. Remove from heat, take out the lime leaves and discard. Allow mixture to cool completely.

Pour mixture into a tray no deeper then 4cm. Place into the freeze for 50 minutes or until almost set solid. Use a fork to scrape backward into flakes.

Serve about a heaped teaspoon onto each, freshly shucked oyster and serve immediately.
