Guava Granita topping for Freshly Shucked Oysters

A fresh tasting, simple to make recipe. This fruity granita is the perfect accompaniment to fresh oysters. Make ahead and serve with sparkling wine.

120ml Guava Vinegar

80mL water

1 tbsp lime juice

2 tsp caster sugar (or to taste)

2 kaffir lime leaves


Place all ingredients in a small saucepan and gently heat until the sugar dissolves. Remove from heat, take out the lime leaves and discard. Allow mixture to cool completely.

Pour mixture into a tray no deeper then 4cm. Place into the freezer for 50 minutes or until almost set solid. Use a fork to scrape backward into flakes.

Serve about a heaped teaspoon onto each, freshly shucked oyster and serve immediately.
