Kingfish Crudo


1 side of kingfish

2 Tbsp tomato oil

Juice of half a grapefruit

3 cherries, thinly sliced

3 sprigs coriander

2 sprigs parsley

Tomato Oil

Step 1 Place cherry tomatoes into a roasting tray and cover with oil and a pinch of salt before placing into the oven and slowly roasting for approx 45-75 minutes.

Step 2 After approx 45-75 minutes, remove from oven and strain oil out and dehydrate leftover tomato skins.

Kingfish Crudo

Step 1 Remove skin from kingfish and slice into 2 fillets and remove blood line.

Step 2 Thinly slice kingfish into small pieces and place on plate before adding, tomato oil, dehydrated tomatoes, grapefruit juice, a pinch of salt, cherry, coriander and parsley on top.
