Pumpkin and Fetta Salad

Delicious fresh salads at their best.

Use your favourite Pukara vinegar to finish the dish off with a little sweetness.

Ingredients

Sauce

Half Butternut Pumpkin

3 cups fresh green beans

2 cups cubed fetta cheese

1 tbsp paprika

Third cup Pukara Estate Lime Flavoured Extra Virgin Olive Oil

3 tbsp fresh lime juice

Salt and Pepper

Method

Peel pumpkin and cut into cubes. Place a small amount of lime oil in a baking tray and toss pumpkin, paprika and salt until coated.

Cook in a hot oven for 15 minutes or until pumpkin is just soft. Blanch green beans and set aside to cool. After the pumpkin and green beans have cooled, combine in a bowl with the fetta cheese.

Mix remaining Lime oil and fresh lime and toss through salad. Add pepper and salt to taste.
