Pumpkin and Fetta Salad

Use your favourite Pukara vinegar to finish the dish off with a little sweetness.

Half Butternut Pumpkin

3 cups fresh green beans

2 cups cubed fetta cheese

1 tbsp paprika

1/3 cup Pukara Estate Lime Extra Virgin Olive Oil

3 tbsp fresh lime juice

Salt and Pepper


Peel pumpkin and cut into cubes. Place a small amount of lime EVOO in a baking tray and toss pumpkin, paprika and salt until coated.

Cook in a hot oven for 15 minutes or until pumpkin is just soft. Blanch green beans and set aside to cool. After the pumpkin and green beans have cooled, combine in a bowl with the fetta cheese.

Mix remaining Lime EVOO and fresh lime, toss through the salad. Add pepper and salt to taste.
