Quick Pasta Salad

Just as the name suggests this quick dish is rich and delicious.


1 Packet penne pasta or similar

1/4 cup Pukara Estate Premium Extra Virgin Olive Oil

1 cup chopped artichoke hearts in brine or oil

1 small red onion diced

2 cups chopped Roma tomato

1/3 cup Pukara Estate Barrel Aged Balsamic Vinegar

2 tbsp fresh lemon juice

1 cup chopped salami

2 tbsp capers

1 cup fresh grated parmesan cheese

2 Tbls Pukara Estate Roast Mushroom and Olive Tapenade


Cook pasta according to direction. Drain and allow to cool. In a small bowl whisk together Premium EVOO, lemon juice and balsamic vinegar.

In a salad bowl, combine pasta and all other ingredients. Gently fold through the salad dressing. Add salt and pepper to taste.
