Roasted Garlic and Pepper Potatoes
Kipfler potatoes, washed
Pukara Estate Premium Extra Virgin Olive Oil
freshly ground black pepper
Pre-heat oven to 200*C. Wash potatoes well with a brush under running water. Brush base of baking dish with Extra Virgin Olive Oil. Put potatoes in baking tray, with whole, unpeeled cloves of garlic and generously cover with freshly ground black pepper and sprinkle with salt.
Toss around baking tray so all pieces are well coated with oil. Place in oven on top shelf and roast until browned or flesh is tender.
