Roasted Winter Vegetables
A nourishing winter side dish that comes together easily and is full of flavour.
Half jap pumpkin, peeled and chopped
3 carrots, sliced
2 parsnips, sliced
1 brown onion, chopped into quarters
3 whole garlic cloves
30ml Novello Extra Virgin Olive Oil, plus oil for finishing
Pepper and Olive Smoked Salt Flakes for seasoning
Pre-heat oven to 200C degrees.
Place the prepared pumpkin, carrots, parsnip, onion and garlic in a baking dish. Coat with olive oil and season with salt flakes. Roast for 40 minutes or until golden.
On a large serving plate, pile the mixed roasted vegetables and drizzle with Novello oil.
Serve with grilled lamb, chicken or atop crusty bread.
