Tomato and Olive Bruschetta

A great afternoon snack or simple entree. Use the freshest sweetest tomatoes possible for this traditional and delicious dish.


3 tbps Pukara Estate Premium Extra Virgin Olive Oil

2 tbps Pukara Estate Barrel Aged Balsamic Vinegar

4 Roma tomatoes

1 small red onion finely diced

Half cup finely Pukara Estate Olives

2 finely chopped garlic cloves

Half cup chopped fresh basil

1 loaf crusty bread, sliced thickly


Toast bread over a hot grill till golden. Drizzle with a little olive oil.

In a bowl, combine tomato, olives, basil, onion, garlic, remaining EVOO, balsamic vinegar and, salt and pepper.

Spoon mixture over toasted bread and serve. Garnish with fresh basil leaves.
