Tropical Lime Prawns

A delicious prawn recipe that is for the adults only.


1/4 cup Pukara Estate Lime Extra Virgin Olive Oil

1/4 cup fresh Lime Juice

3 tbsp Tequila

2 tbsp Cointreau or Grand marnier

1/2 diced shallots

2 large cloves garlic crushed

1/4 cup finely diced red onion

1/4 tsp curry powder

1 tsp sea salt

1/4 tsp ground cumin

1/2 tsp fresh black pepper

2 kg green prawns peeled and deveined tails on

1tbsp Pukara Estate Premium Extra Virgin Olive Oil


Place all the ingredients except the prawns and Premium EVOO in a container suitable for marinating and mix well. Add the prawns and refrigerate for an hour, remembering to turn every 15 minutes.

Heat a heavy based fry pan to a med/high heat and add the tbsp of Premium EVOO. Remove prawns from marinade and cook for no more than a minute on each side.

Put prawns aside in a warm spot and add the marinade mixture to the pan. Allow to reduce by a third.

Serve on white rice and garnish with shredded coconut or fresh broad leaf parsley.
