Tuna Tartare by Ben Milbourne

1 tsp fish sauce

Juice of 2 Limes

1 tbsp sugar

1 tbsp soy sauce

1 tbsp Pukara Estate Extra Virgin Olive Oil

2 purple Shallots, finely diced

1 Chilli, finely diced

1 Garlic clove, finely diced

1 tbsp coriander

Pinch of Pukara Estate Salt

50g Fresh Tuna loin


In a small bowl combine fish sauce, lime juice, sugar, soy sauce, olive oil, shallots, chilli, garlic, coriander and a pinch of salt.

Cut tuna into 1.5cm x 1.5cm cubes. Add the bowl with the dressing and stir until tuna is coated.

Serve with a pinch of salt.
