Tuscan Bread Soup


1 red onion, diced

2 cloves garlic, thinly sliced

1 tsp chilli flakes

2 pinches Pukara Estate Salt Flakes

2 tbsp Pukara Estate Premium Olive Oil

800g peeled Italian tomatoes

½ cup red wine

½ loaf sourdough, cut into cubes

12 basil leaves, chopped

2 tbsp Pukara Estate Barrel Aged Balsamic Vinegar


Add red onion, garlic and chilli flakes to a pot with a pinch of salt and a drizzle of oil before leaving to cook for approx 2 minutes.

​After approx 2 minutes when onion is soft, add tomatoes and red wine before mixing together and leaving to cook for a further 5 minutes.

After approx 5 minutes, add sourdough, basil, balsamic and a pinch of salt before mixing together and serving up with a few basil leaves and a drizzle of oil on top.
